Bees that produce Manuka honey in New Zealand specifically pollinate the Manuka bush which is a hardy, evergreen shrub native to New Zealand and parts of Australia. .

The bush has small, dark green, needle-like leaves that release a pleasant, aromatic scent when crushed.

In spring and early summer, it bursts into bloom with delicate five-petaled flowers, ranging from white to pink and deep red, attracting bees that produce highly prized Manuka honey.

UMF (Unique Manuka Factor)

This is the most recognized certification, ensuring that the honey has met strict standards for purity and potency. 

The UMF rating, typically ranging from 5+ to 20+, indicates the level of key compounds like methylglyoxal (MGO) and dihydroxyacetone (DHA) that provide its antibacterial properties. The higher the UMF rating, the more potent the honey.
